Catering Conundrums
I was recently commissioned to cater a party for about 100 people in a few weeks for an art and music show. Overwhelming? Yes. The most I’ve cooked for at one time was a giant pot of dump and stir chili for a group of 20 people earlier in the semester. With this job though, the pressure is on. Not only am I supposed to feed them, but I’m supposed to impress them.
Three weeks...

WTF is Steelhead?
My father grills lots of fish, salmon and steelhead being his favorites. But of late, he’s been bugging me with the same question that nobody seems able to answer: “What makes steelhead different from salmon?” I’ve had this question on the back burner for a while, but since there’s an essay that I don’t want to edit, I was looking for reasons to...

WTF is Aioli?
“Aioli? What’s that? Isn’t it, like, the thing around the nipple?” Yes indeed, I am surrounded by people who don’t know what food is. I know, I should expect it, but I keep forgetting I have to expect it. So for all of you who were wondering the same thing as one of my friends (who, to retain what dignity they have left, will remain anonymous), and even for...

Garlic and Buttermilk Mashed Potatoes
I was working on some homework, when an odd craving struck me. ”I need some mashed potatoes,” I said to myself. It was actually quite awkward, as my roommate was reading quietly on his bed when I had my epiphany. Without a moment’s hesitation, I stuffed my book and my wallet into my pockets and set off for Fred Meyer. I soon found out that you can make mashed potatoes for...

Debunking the Chocolate Myth
If you ask most people what foods are aphrodisiacs (foods that make you feel like you’re in love), chocolate is commonly cited. I have no qualms with chocolate, in fact, it’s one of the few foods I regiment my intake of: one square of dark chocolate every other day. Dark chocolate especially is quite nutritious and contains a lot of healthy components. But does it contain elements...

Pioneer Log Food Writer
This is just a brief announcement for all of my followers and friends. I have recently been given a job as a food writer for my college newspaper. And here’s the cool thing: they actually pay me! I am supremely excited to be paid to do what I love. This gives me a great opportunity to get more readership, exposure, experience, and knowledge of the wonderful world of food.
But...

N'etouffee
As an avid soul food lover, I am always looking forward to a soul food dining experience. Tonight, my college cafeteria attempted to provide such an experience by putting out sub par mac and cheese, poorly executed fried chicken, and honestly some of the worst etouffee I have ever experienced. I will recount the agony for your reading pleasure.
For those of you who don’t know, etouffee is...
